I. Introduction of Oats Flakes ( breakfast cereal )

Compared with other cereals, oats have high nutrition for health. The protein content of oats is the highest among cereals (the protein content in natural oats is 13%~15%). Dietary fiber content is 10 times that of rice. Unsaturated fatty acids are 5 times that of rice. Oats-based breakfast cereals can supplement the body’s needs with other breakfast cereals. With the growing interests in health claims, oatmeal-based breakfast cereals are gaining traction.

The food extrusion machine is commonly used to process instant breakfast oatmeal. Like all other breakfast cereals, in order to make the puffed oat flakes soaked in milk not easy to break, it requires the flake itself a finer tissue structure, and smaller puffed pores, so a lower gelatinization temperature is required, so an extruder machine in food industry with longer barrel is required. Besides, due to the high oil content of oats, a higher cooking energy input is required. Plus, oats are high in fiber, it doesn’t expand so well. Therefore, we suggest adding pre-conditioning process before extrusion to gelatinize the oat starch in advance.

Note: Oatmeal contains high oil (4%~16%, large proportion of unsaturated lipids) and lipase (6-7g per 100g, 4 times that of rice). Lipids are easily hydrolyzed, causing oats to become rancid (bitter taste). Therefore, in the modern oat processing industry, oats must undergo enzyme inactivation by a heat treatment before milling. Small-scale breakfast cereal processors can directly purchase enzyme-inactivated oat starch. Large-scale breakfast cereal processing enterprises can carry out enzyme-inactivating treatment by themselves if use raw oat before extruding.

IV. The General Flow Chart for Oats Flakes Food Extrusion Process

  • Step 1: Mixing of wholewheat Flour & wheat bran with water

Extrusion technology process steps are as follows:

  1. Mix oatmeal, water and other ingredients and stir them well.
  2. The mixture is loaded into the preconditioner, and the pregelatinization is carried out by setting the temperature and pressure.
  3. Then it is conveyed from the pre-conditioner to the foodextrusion machine with extended barrel. By setting a certain temperature and pressure, the mixture is extruded into pellets of desired size, and then pressed into sheets by rollers.
  4. The pressed flakes are dried, baked, etc. to make them crunchy.
  5. Up to now, the plain breakfast oat flake is done.
  6. According to the market demand, the seasoning drum can be used to season the flakes.
  7. If plain oat flakes are to be glazed, they are coated by such as spray syrup, chocolate, etc.
  8. In the end, the flakes are dried, cooled and packed.
