I. Introduction of Extrusion Precooked Cornmeal
Pre cooked cornmeal is processed by roasting or extruding the raw corn flour. When food is processed with precooked cornmeal, the cooking time is short, and the food texture is usually crispy on the outside and soft on the inside. It has a wide range of uses in food process, such as making dishes, bakery goods, fast food products, meat preparations and soups. Combined with other ingredients, it becomes nutritious corn flour for drinking purpose, and can also be used as raw material for various corn snack foods.
Extrusion technology is one of the main methods of producing pre-cooked cornmeal, which is easy to operate and of high efficiency. By adjusting the extrusion process (such as extrusion temperature, pressure, time, etc.), precooked cornmeal with different expansion degrees and different features can be obtained. The raw material for producing extruded cornmeal can be corn grits (from which the germ has been removed) or whole corn kernels. Using corn grits as raw material, puffed corn flour can be directly produced through the food extruder. While, using whole corn kernels as raw material, a complete set of degerming equipment should be configured at the beginning of the entire cornmeal food process equipment. It removes corn husks and corn germs to get corn grits first, and then is extruded.

Note: Since corn germ is rich in oleic acid, linoleic acid, and vitamin E, which easily cause deterioration during storage, the germ must be removed before it is processed into cornmeal. The removed by-product corn germ can be separately processed into corn germ oil or corn germ meal.
